  • 4 Gastronome Professionnels La Nouvelle Agriculture duck legs
  • 500g Sweet potatoes
  • 1 Bottle - barbecue sauce
  • 50g Butter
  • Pepper, coriander, garlic, cumin - at convenience


Marinate the duck legs in barbecue sauce with the spices for 24 hours in the fridge
Put the legs in the oven at 150° for 1h30 - meat should be well done
Wash the sweet potatoes and put them in the oven
Shred the legs with the cooking juices
Collect the pulp of the vegetables, add salt, pepper, crush and add some butter
Set up the sweet potatoes parmentier by layering meat and vegetables
